Recipe: Chicken Squares for PicnicThis recipe reminds me of my childhood days when my big sister used to take us (me and my other 3 sisters) on picnics. We would enjoy some of the greatest parks in the country  around the Emerald Necklace in NE Ohio. I think she probably clipped this one out of the newspaper or something — even so, these chicken squares are yum, yum, yummy. I love you Nancy and I have such fond memories of all the time you spent with your little sisters.

Preheat Oven to 350

This is a great idea for something different for a summer picnic.  Make some chicken squares and surprise your friends with a yummy, light, different kind of chicken sandwich!

Ingredients:

  • 3 oz softened cream cheese
  • 2 Tablespoons melted margarine
  • 2 cups cooked cubed chicken (or turkey)
  • ¼ Teaspoon salt
  • Cracked pepper to taste
  • 1 Tablespoon chives (or chopped onion)

  • 1 package of crescent rolls
  • 2 more Tablespoons of melted butter
  • 2 teaspoons of bread crumbs

Mix cream cheese and melted margarine together.  Add to remaining ingredients.

Separate the crescent rolls and put two triangles together to form a square … gently press together to seal perforations.

Spoon ¼ of the chicken mixture onto each square.  Pull up the four corners on each square and gently pinch together.

Brush lightly with melted margarine and lightly sprinkle with bread crumbs.  Bake at 350 on ungreased baking sheet for 20 -25 minutes until golden brown.  Serve cool or cold.
